Black Bean & Quinoa Veggie Burger

Ok, so it's Tuesday and I'm already off my menu plan for the week, but hear me out, it's not so bad, haha! I didn't go out to eat or go to the grocery store and buy a bunch of new stuff. I just decided to make something different with things I already had at home after I saw this delicious recipe for Black Bean & Quinoa Burgers on pinterest!

Veggie Burger

They were super simple and delicious! I made one slight adjustment, the recipe called for 1/2 cup cooked quinoa, but I measured 1/2 cup dry when preparing it and just thought I'd use the leftovers later. Well, I ended up using all of it anyway, it just seemed like the ratio of quinoa to black beans wasn't quite right, so I was pretty happy that I had made extra. I fried them up in my cast iron skillet, which is awesome because you can just move it straight from the stovetop to the oven. Then, to serve I just put them on a bed of lettuce (didn't have any buns) and topped them with ketchup, mustard, onion, tomato and avocado. Healthy and yummy!
