Black Bean & Quinoa Veggie Burger

Ok, so it's Tuesday and I'm already off my menu plan for the week, but hear me out, it's not so bad, haha! I didn't go out to eat or go to the grocery store and buy a bunch of new stuff. I just decided to make something different with things I already had at home after I saw this delicious recipe for Black Bean & Quinoa Burgers on pinterest!

Veggie Burger

They were super simple and delicious! I made one slight adjustment, the recipe called for 1/2 cup cooked quinoa, but I measured 1/2 cup dry when preparing it and just thought I'd use the leftovers later. Well, I ended up using all of it anyway, it just seemed like the ratio of quinoa to black beans wasn't quite right, so I was pretty happy that I had made extra. I fried them up in my cast iron skillet, which is awesome because you can just move it straight from the stovetop to the oven. Then, to serve I just put them on a bed of lettuce (didn't have any buns) and topped them with ketchup, mustard, onion, tomato and avocado. Healthy and yummy!

Happy Monday folks!

So I finally uploaded the pictures from our trip in May to the Sylvia Beach Hotel.

We stayed in the Shakespeare room, which was so lovely. Spent most of our time upstairs in the library, reading and sipping tea.

You get complimentary breakfast with your stay, and both of the mornings we were there breakfast was so yummy! The dinning room is on the bottom floor of the hotel and it's on the ocean side, so you get a lovely view of the ocean while you eat. The first day it was banana pancakes, and the second day it was poached eggs. You get a kind of main course, and then there are tons of other things like fruit and yogurt and cereal too. We didn't eat dinner there, but I wish we had, if their breakfast is any indication, the dinners are probably delicious!

The only down side of our stay was that I was sick the whole time we were there with a bad cold, which turned into a sinus infection, yuck, but despite that we still had a great time. If you're going to be sick on vacation you might as well be at a place where you can not feel bad about just lounging around and reading the whole time, lol. Not that I planned on being sick. It would have been more enjoyable if I wasn't.

Anyway I can't recommend this place more, it was so wonderful and we can't wait to go back!

Menu Plan for this Week

Here is my menu plan for the week. We're trying to get better about doing this, and actually sticking to the plan. The idea is to do simple stuff so we don't get too tired to cook and end up going out to eat. That is what used to happen, but that is not in our budget plan anymore, let's see how this week goes!

Breakfasts- Oatmeal, Eggs, Breakfast Quinoa, Yogurt
Lunches- Big green salads with beans, tuna and/or leftovers
Snacks- chips & salsa, cucumbers with humus, almonds, popcorn

Monday- Roasted Chicken with Roasted Veggies and Rice
Tuesday- Pasta with tomato sauce, salad and bread
Wednesday- Burritos (with some left over chicken from Monday)
Thursday-  Chicken Soup (with the rest of the leftover chicken) and bread. Going to do something sort of like Lemon Chicken Orzo Soup, only probably substituting the orzo for something else like rice maybe, since I don't have any orzo 
Friday- Creamy Avacado Pasta with Brussels Sprouts
Saturday- Vegetarian Chili, will probably loosely use this recipe from Martha Stewart 
Sunday- Leftovers
